Usually a tomato based sauce, infused with onions, spices, ginger and garlic, that the chips/fries are coated in. Even if they don't have them on the menu. Your local Indian can make them using the base for their various curries. The real daddy are the garlic chips. I got introduced to Linghams chilli sauce by the girl the other day - ingredients red chilli, sugar, salt, vinegar - and we had some burgers on Saturday so I mixed it with mayo to make sweet chilli mayo. Somehow in her eyes this made me a genius. Burger, bacon, fried onions, chilli mayo on the bottom bun, Reds Carolina mustard sauce on the top, brioche buns. I was very happy.
