I decided to make a corned beef and potato pie today just using a simple recipe I found online. Happy with how it came out. I had a hard time getting all the pastry to brown so I've probably over cooked it. We didn't have a rolling pin, so I used a pvc pipe from the garage that I disinfected, so hopefully we survive. Took some pictures along the way. It's a bit of a tough time for me at the moment having worked so hard to lose weight that now we can't weigh in or play football, it's killing me. It's hard at the moment to eat well too with fresh stuff been a bit rare in the supermarket. I've been vegetarian all year but I've lapsed this week as we had burritos and Moussaka in the freezer so it doesn't make sense not to eat perfectly good stuff. Also eating too much carbs. It's far easier unfortunately. Anyway, did these Sloppy Joes at the weekend with quorn mince. Pretty sure they're vegan (if you don't put normal cheese on like I did) as it's mince, onion, peppers, tomato sauce, tomato ketchup, BBQ sauce and a bit of spice. Â We had previously frozen Moussaka with Pitta and Feta salad for tea last night so on the Greek kick, I used the feta, courgette, tomatoes and cannellini beans (just because they're good protein) in a Frittata for breakfast (and probably lunch!) this morning. Started with this hidden veg pizza/pasta sauce. We had it with Tagliatelle on Saturday night and both fussy kids loved it despite it having carrot, leek, courgette and onion in it. You can keep it chunky and it would be better with pasta but my kids are knobheads so I blitzed it up. Been wanting to try this for ages but constantly bottle it. Had a go at English Muffins. Paul Hollywood's recipe to be precise. I had the head in the pan too high for the first couple (you can see I've hidden the burnt ones at the back of the bottom left pic) but even they were delicious. Not that difficult either. I've only got a small round cutter so they could do with been a bit bigger but otherwise all good. I put it on FB and someone I know replied "Where are you getting yeast from?" I felt a bit bad just replying "The cupboard!" Something else I've been meaning to try - Coconut tarts. Coconut and jam is pretty much my favourite thing in the world right now so this is my heaven. Did some plain ones too as no-one else in the house likes coconut. We got a big veg delivery on Friday and I've been trying to ensure we use it all. Cooked and frozen some and did the pasta sauce. Also made my first ever pie for yesterday's lunch. It's a meat pie because we had minced beef in the freezer and lamb stock cubes but I'll definitely do it with Quorn mince and veg stock in the future. Filling was delicious with grated carrot and leek and peas from the freezer. I completely fucked up and didn't have enough pastry for the lid, especially when it shrunk a little bit in the freezer. Spent 30 minutes ringing around and Just Eating trying to get someone to deliver but failed. Got cross so threw some squash and chorizo in the oven with some honey and cumin seed.
