From the man who couldn't even make pancake batter a couple years ago no less! That was very frustrating - I've always been able to cook, thanks to my parents both being good cooks, so it made it particularly exasperating that I couldn't nail something as simple as pancake batter. Think I've got the hang of it now, though!
Paid Members Thunderplex Posted March 23, 2022 Paid Members Share Posted March 23, 2022 Love coronation chicken. What’s the recipe please?

Paid Members Thunderplex Posted April 4, 2022 Paid Members Share Posted April 4, 2022 Did a pile of Chicken Tikka yesterday. Some went in a kebab, vac pack and froze the rest to be sous vide’d when I need it.
Paid Members chokeout Posted April 9, 2022 Paid Members Share Posted April 9, 2022 Spent the morning curing my own bacon. Got a pancetta and a chilli and garlic in the fridge. I will report back!

Moderators Chest Rockwell Posted April 16, 2022 Moderators Share Posted April 16, 2022 Oooh nice. I've not cured bacon in years. The slicing is a pain in the arse but the taste is amazing. I've just made a kilo of merguez mix now. Will turn that into some sausages later this weekend..
Paid Members Carbomb Posted April 16, 2022 Paid Members Share Posted April 16, 2022 Ooh, love merguez. The Algerian butchers on Blackstock Road in Finsbury Park are my usual go-to for those.
Paid Members seph Posted April 18, 2022 Paid Members Share Posted April 18, 2022 My 2nd attempt at candying bacon. The first time was a semi-botch with the pieces cooked by themselves for half of the time and the other half draped on chicken. It cooked (and tasted well enough) but didn't firm up to any extent. This time they were cooked by themseleves and left to cool on paper afterwards. Not enough for a main event portion IMO but I don't have suitable grills to cook more than 6 at a time. Paid Members stumobir Posted May 10, 2022 Paid Members Share Posted May 10, 2022 (edited) Few dishes that I’ve cooked up in the past week or so: Trying to do a Paella Valenciana as close to the ones I was eating when I spent a month in Valencia a couple of years ago. Paella looks like a simple dish but trying to get the cooking of each element right without over or under doing another has been tricky. My first few attempts were a mushy mess. This is the closest I’ve been so far but could’ve been doing with a touch more tomato purée and paprika. Fish tacos with pickled shallots and chipotle mayo. Apologies for the chipped plate 😳 Pan fried chicken thigh, hasselback potatoes and a lentil, leek & creme fraiche concotion. BBQ ribs (my own sauce), spicy sweet potato wedges and a sweetcorn and avocado salsa. Warm farro and roast root veg salad with coriander and parsley dressing. Paid Members air_raid Posted June 19, 2022 Paid Members Share Posted June 19, 2022 This is more “foraging” than “cookery” but here goes - bilberries. Also winberries/whinberries, European blueberries and a host of other names. Become low key obsessed with finding some come the season, mostly for making jagodzianki with Mrs raid tasting like what she gets at home rather than using (American) blueberries or going to the farm for blackcurrants (which we’ll end up doing anyway). I’ve read up on moorlands and the Peak District for potential sites to find them, anyone into berries know any good spots easy drive from Greater Manchester? I only know Mam Tor to be honest, and I’m wondering if a couple of hours off the beaten track might yield any results early August or if I’m wasting my time. Good news, a decent spring has brought the season into proper line, but get as far south as you can for best results. But you are still slightly early. I read last weekend of July/early August is when it starts, is that dated?
Paid Members Carbomb Posted July 2, 2022 Paid Members Share Posted July 2, 2022 (edited) This post is brought to you by Egg & Chips. "Ooh - Egg & Chips." (Lunch today. We had some chips left over from yesterday from the chippy, so I refried them and seasoned them with All-Purpose Seasoning.)
