These off the BBC good food website I tried a while ago and were pretty good! 

 

50g butter, plus a little extra for greasing

2 tbsp smooth peanut butter

3 tbsp honey or maple syrup

2 ripe bananas, mashed

1 apple, peeled and grated

250g rolled oats

85g dried apricot, chopped

100g raisin

85g mixed seed (we used pumpkin and sunflower). 

Method

  1. Heat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, and mix to combine.

  2. Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface. Bake for 55 mins until golden. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge. They will keep for up to 3 days

Not done much baking for a while. Been finding the weight loss a bit harder now so taken away some of my temptations. The missus sent me a pic of a lemon bakewell someone had posted on Facebook so I had a go at it. First time I've done a big tart (kenny williams .gif). Came out really well. I didn't ice it as had to go to footy but the kids did. I won't post a pic or Butchi will get his porno references out again!

Little while ago, I did chick pea curry. Had som in the freezer so defrosted it for lunch on Monday with Cauliflower Rice. Was fucking awesome. I'm not a huge rice fan, except in Arancini, I find it a bit stodgy. The cauli was really light and tasty. Think I'll make a big batch of the curry at weekend and freeze it.

Madeleines are on my list to do. Need to get myself a mould. I got a Rachel Khoo book from the kids. a) because i like her recipes and b) because my missus knows I'm in love with her! Saw her madeleine recipe in there and remembered I need to give it a go.

Made a batch of Chickpea curry on Saturday. One for the fridge and two for the freezer. Was nice because I let my daughter cook it and I pretty much just watched over her.

At the same time, made bolognese stuffed canneloni for tea. My daughter is a big fan of pasta but didn't enjoy the spinach version last time so we did it against with a nice homemade bolognese and bechemel. Really pleased with it. My younger daughter said it was better than cheesy chips which is the biggest compliment I've ever had.

Now on to the real stuff. I'm a huge Arancini fan. Scoped out the best places to get it locally and found some reasonable pre-packed versions. Had a go at making it yesterday. Made a basic Risotto and a very thick rago. Then let it cool, formed into balls, breadcrumbed and fried off. Really pleased with it. If the ones in the market are 10/10 (and they are), then mine were only 7/10 max but still chuffed with them.

Not only is work incredibly busy this week and we are organising our annual football tournament which takes every spare second but I've also volunteered to make cakes for a cake stall. So I think I might be pulling an all-nighter on Thursday and Friday! Planning Coffee cakes, Lemon Drizzle, Brownies, Bakewells, Cornflake Tart, Viennese Biscuits, Mint choc cookies and gingerbread. Maybe chocolate concrete too. People seem to be into that "retro" thing.

I'm after some advice if anyone can help. Currently just coming to the end of having a new kitchen fitted. I'm changing from having an electric oven to a gas oven. Can anyone tell me if there are any major differences in how they cook and any pitfalls I should keep an eye out for. 

I could google it but you guys are generally a better pool of advice.

Gas is more expensive and gives more variable results. Due to it being an actual flame some things such as pizza can blacken quickly if left unattended. If you do any cake baking expect a lot of trial and error. They also take longer to get up to temp.
