It's somewhere inbetween, like a soft cookie. There's plenty left if you're walking to East Yorkshire this afternoon 😆

Which is basically an omelette on rice, but covered in a type of gravy or ketchup. I just used a microwave packet of rice and I overcooked the omelette a bit. It wasn't the best looking thing which is why I didn't take a picture, but the sauce definitely made it really nice. This is the recipe I followed, but being a filthy gaijin who disrespect Nihon I didn't use chopsticks. Â Ah, Jun's Kitchen! I found it through the immensely-satisfying video he made of repairing and sharpening a rusty, dull knife. Cathartic. In Osaka, I found a restaurant that specialises in omu-rice - could have it with steamed or fried rice, the egg cooked to varying degrees, and lots of different sauces, not just curry or gravy. I particularly remember a chicken-and-herb cream sauce they did which was gorgeous. (I don't know any Japanese who eats omu-rice with chopsticks.) I was also talking more about using spatula to cook the egg rather than chopsticks. I just went HAM with a spoon and since I was starving by this point the plate lasted less than 10 minutes.
Paid Members tiger_rick Posted September 20, 2019 Paid Members Share Posted September 20, 2019 (edited) Watched a terrible film recently, as mentioned in the film thread, but was intrigued by the mention of ANZAC biscuits. Had a go at them. Beautiful biscuits. Oats and coconut give a great flavour and then syrup and sugar a chewiness. So easy too. I used a recipt off an NZ website as thought it'd be more authentic. Ingredients: 1 cup rolled oats 1 cup thread coconut 1 cup flour 1 cup sugar 125g butter 2 Tbsp golden syrup 1 tsp baking soda 2 Tbsp boiling water Mix all your dry ingredients except the baking powder. Gently melt the butter and syrup together, then take off the heat and dissolve the baking powder in the water and add to it. Then add to the dry and mix until a dough forms. Roll into balls of whatever size you want (I went for about big conkers), flatten to about 1cm on your baking papaer lined tray and bake at 180/160fan for 12-15 mins. Paid Members Carbomb Posted September 20, 2019 Paid Members Share Posted September 20, 2019 Those sound tremendous, rick. Thanks for the recipe - I've not tried baking much in the way of cakes and biscuits, but they sound like a good, simple recipe to start with. Paid Members wandshogun09 Posted September 23, 2019 Paid Members Share Posted September 23, 2019 @tiger_rick will probably like this; I doubt I could even manage a decent sponge so this type of stuff is amazing to me.
Paid Members tiger_rick Posted September 27, 2019 Paid Members Share Posted September 27, 2019 Did my mint brownies again for Macmillan coffee morning. I make a mean brownie, if I have to say so myself! Â Also did Bakewells. Tried to ice them for a change. Won't be giving up the day job. Paid Members tiger_rick Posted October 14, 2019 Paid Members Share Posted October 14, 2019 Made Sweet Potato burgers for tea last night. Vegan too, though the breadcakes aren't! Not sure if i made them too thick or the pan wasn't hot enough but they didn't get quite crisp enoguh but the taste was superb. Simple as microwave baking 3 smallish sweet potatoes, mushing up when cool, adding clove of garlic, half a red onion, couple of tablspoons of tinned sweetcorn, teaspoon of paprika, handful of coriander and 50g breadcrumbs. Form into burgers, chill and then fry. Really easy. Did these too. Individual oreo cheesecakes. These are incredible. Instead of using all the suggested sugar, I swapped it for the filling I scraped out of the middle. Â

Paid Members Carbomb Posted October 14, 2019 Paid Members Share Posted October 14, 2019 Not a fan of cauliflower cheese in itself, but mixed with pasta or onion or bread, that sounds very nice indeed.
