Not overly comfortable admitting this but my wife and I hit a bit of a wall last year. Something had to improve and we've worked really hard at making more time together and doing things we used to do before we were just defined by being people who work, bring up kids and run a football club. One of my favourite improvements has been making sure we have a proper sit-down meal time a couple of times a week. That's really encouraged me to think about ingredients and cooking again and I love it. These two are from Punch Of Nom. "Pizza" pasta with broccoli and their low-cal "Portuguese tarts". The tarts are rubbish once cold so enjoy them ASAP if you do them! I'm meat free so swapped pepperoni for mushrooms and it missed it. Pepperoni is god-tier food. My first time cooking Shakshuka and it was ridiculously easy. Theirs looks better than mine but I absolutely bottled it with the eggs and overdid them. Did this one a few weeks ago but it was all "Tik-tok trend" stuff, or just good ideas for the air fryer if you prefer! I can't remember what she had but it was something chicken, so I just did a veggie burger but the roasted cherry tomatoes with balsamic and the baby potatoes with paprika, garlic and onion were absolutely fantastic and so easy. Paid Members I Bent My Wookie Posted February 13, 2025 Paid Members Posted February 13, 2025 (edited) Did Sunday Roast for my housemate last weekend as a ploy for him to do all the washing up we had and because he woke me up singing Shaboozey Tipsy at 1am Saturday and I found it hilarious. Meat was exactly how I wanted, cooked outside, still flavour inside. Yorkies, Maple Glazed Carrots, Beef dripping Roasties with Orange and Sage and then your standard veg because I was also too hungover to add anything else. The gravy though is the first time I've ever made anything using the leftover veg from the beef tray and juices and it was the best part. Potentially because I didn't fuss after them, just left them to do their stuff and pray they didn't stick to the roof of the oven. Biggest difference i found for roasties is to pre prep them, score them (I just swirl them in the colander), toss with salt, a small bit of flour, and whatever herbs you want. Let cool (cover with a bit of kitchen roll) then when you cook them they become great. Quote

You can par boil them for longer that way meaning you can get the outside really fluffy which then becomes really crispy, but the inside isn't cooked to mush Quote
