After recipes as well where I can make a massive batch and freeze as I want to be better with my time. Miso baked aubergines are really easy, and you can have them with noodles or rice. You need one aubergine which you want to slice in half lengthways. Score it with your knife in a cross pattern. Recipes for the miso topping vary, you can Google for specific amounts but in a bowl I put about 2 heaped teaspoons of miso paste, half a teaspoon of ginger paste and garlic paste (I always have them in the fridge for speedy cooking) a little cooking oil - you can use anything but proper recipes state sesame seeds oil but I use whatever I have, a little soy sauce and some rice wine vinegar. Mix it all together to get a paste, brush it over the criss-cross pattern you scored and stick it in the air fryer for about 20 minutes on 180 (cooking times vary depending on your appliance) or 35 minutes in the oven. Stick it on top of your noodles or rice and eat. You can jazz the rice/noodles up by making it egg fried and sticking extra veg in. Soy sauce, sesame seeds etc can be added to taste. Edit: if scoring the aubergine etc sounds to complicated, you can also cut it in discs and just chuck the disks in a bowl, pour the miso paste mixture on to it, make sure all discs are covered and put them in the oven/air fryer. They are not as melt in the mouth as doing a half aubergine, but still delicious and usually cook faster. Edited March 25 by deathrey Quote
