I've always used combined beef and pork mince, celery, onions, carrots, garlic, salt, pepper, beef stock, oregano, basil and tomatoes.

Can't use pork, and only tend to use a little tomato purée, but broadly the same - also add in a dash of milk. Sounds weird, but it's apparently the big Italian secret, and it does add an odd bit of richness to it.

I have actually heard this milk thing before from an italian woman I worked with. Blew my mind.

It does work! Try it next time, it's surprising.

Back once again with more updates from my Filipino Father in Law.

I made Spaghetti Bolognese the other night for my wife and I. I offered him some and he shouted "I will eat later!" from the living room. Later turned out to be approximately 30 seconds later as he immediately came into the kitchen and served himself a plate.

For some reason, he then loudly announced "I will eat this...with rice!". So he had a plate of Bolognese with the pasta already mixed together with the meat and sauce and a portion of white rice beside it. Bit odd, I thought, but nothing too crazy.

He then poured some chicken and rice soup over the top of all of this. Then added some fish sauce. Then added some pickled onions on the side.

He may be the only person in human history to have consumed Bolognese in this way.

I might send this to my stepbrother in Naples. He'd probably have a heart attack reading it though.

I said to my wife earlier that I can confidently speak for all of Italy when I say her dad is not welcome in their country.

Another update from father in law.

I grilled a few rashers of Turkey Bacon the other morning for him.

I returned to the kitchen a while later to find the turkey hadn't been consumed. He had instead submerged the meat in oil and fried until it effectively become a crisp.

He didnt even eat any of it so I can only assume he's just doing stuff to wind me up now.

Unbelievably I am back again with more crimes.

My mother in law mentioned recently that she had never eaten Risotto in her life but wanted to try it. I made a chicken and mushroom risotto and served it up.

ENTER FATHER IN LAW

What did he season this with? Black pepper perhaps? Some extra parmesan?

No. The first thing he added was a fucking frankfurter sausage that he prepared earlier. He then topped the whole lot with jalapeños and the vinegar they had been soaking in.

He said one thing and one thing only about the meal.

"You know what would be good with this? Mayonnaise."

I have a real sitcom father in law mooching about image of him in my head, a bit like a Philippino Jerry Stiller in King of Queens.

I must stress I don't actually want to know any thing else about him apart from his food crimes, lest I ruin this mental image.
