Is that Time of the Year that us Brits go caveman, play with fire and burn sausages.  I bbq year round but the silly season has started for the muggles so I thought I’d make a thread!

Today’s offering, a 19 hour Over the Top chilli.  I have a new INKBIRD temp controller and it held 255f for the full cook and I’ve still got over half of the lumpwood unlit in the Kamodo.  Really chuffed with it.

Nice! That looks great.

For a while now I've been regularly making homemade pizza every Sunday. I decided I enjoy it enough that I need to invest in cooking it properly as my oven only goes up to 270°C.

My bbq has a handle you can use to raise and lower the level of the coals, and I have a pizza stone, so I have bought some wood and am going to see if I can get and hold that sucker at a hot enough temperature to not need to buy a separate pizza oven.

I used to love BBQing and smoking meat but I started dating a vegetarian and now live with her so I don’t really do it much any more but maybe this thread can inspire me to get back into it.

I’ve still got a Webber kettle, not the fanciest bit of kit but it should be able to get the job done.

The Weber Kettles an excellent bit of kit.  Not much you can’t do on it.  Had mine for 13 years, still great.

I’ve made wood-fired pizza on a pizza stone inside my Weber Kettle on a few occasions and it’s always turned out well, you should be absolutely fine with a similar bit of kit.

I bought a pizza stone last year in the Asda end of season sale for Couple of quid.  Not used it yet so very interested.

Sweet, good to know!

Any tips?

Nothing specific to be honest, it was a fairly easy process. Plenty of wood, both vents wide open if you have them, get the fire going on one side and then set the pizza stone on the opposite side. It’s not quite as good as an actual pizza oven, but works well nonetheless.

Doing a turkey on the Kamodo on Sunday.  When the fat bastard had defrosted will be spatchcocking it and roaring on a bed of veg and its spine.  Dry brining it for a day and will just be brushing with oil and a grind of black pepper.  Just doing charcoal, no real smoke wood do all will be happy.
