Field watches are simply military watches dating back to WW1, or they were. Now its just a design type, although some are still used by military today. Christopher Ward have a whole range that is associated with the UK armed forces here:

A hackable movement is one where you can stop the second hand dead on the hour mark when setting the time, which means you can set it more accurately.
