Not quite cooking but the other week I froze some oat and raisin cookie dough I had left over. One of my knobhead kids was moaning this moaning about the selection on offer for pack up so I baked these from frozen in 15 mins. Genius. Think I might go into the cookie dough business.

Over in the Health and Fitness thread (I think?) @tiger_rick mentioned butternut squash. I made one of the recipes I described:

Squash, sweetcorn and red onions roasted with rosemary. Tossed together with cooked pasta, balsamic vinegar and oil then some grated Parmesan. Wholesome.

Excited to be doing a 24 hour sous vide BBQ pork shoulder for the bank holiday. Liquid smoke, good quality rub, the whole lot (well, apart from an actual BBQ).

Few recent things. I've been using the water bath a lot recently. Did a chilli garlic chicken and a butter chicken from scratch weekend before last with all the sundries. Seven bloody hours in the kitchen, but I have base sauce for months now. Found the wonders of anchoor powder, which is basically tamarind on steroids, so used a lot of that to give my chilli garlic a nice sweet and sour twist.

Did my own spice stock for it and sous vide chicken thighs in a yoghurt spiced marinade for the curries. Just crisped them up in a hot pan with ghee after the water bath. 

Also, (pictured below the vacuum packed chicken) made a 24 hour sous vide brisket last weekend along with my standard roast trimmings. Appalling picture, but the beef was magnificent.

Finally, another Coq au Vin, which remains one of my top 3 mains to cook and eat. Could go through gallons of the sauce.

Rub of paprika, garlic powder, salt, pepper, oregano, mustard seeds and coriander seeds.

Some poor bastard has to try and follow Gus and that poor bastard is me!

My sister-in-law bought me a 3 in one Doughnut/Waffle/Brownie maker recently. We got it dirty for the first time yesterday. It's very easy to put too much mixture in but it made lovely little doughnuts.

We did some Strawberry shortcake inspired ones for after tea last night too. They were awesome.

I don't get a chance to do it much these days due to limited time, but I made a big batch of pepper and onion sausages this weekend. 40 of them (around 2kg) .Hopefully enough to keep me going for a little while...

Think it was @Silky Kisser mentioned once about taking omelettes to work for lunch. Tried it today. Did a mushroom, pepper and feta omelette this morning and stuck it in the micro for lunch. Worked a treat. Would cook it a bit less in future but otherwise, cracking idea.

anyone got a recipe for basic, plain flapjacks please? My mum does me amazing ones, i really enjoy them, but i would like to cut back on the sugar/syrup if i can. does anyone know of a low sugar or sugar free recipe please?

These off the BBC good food website I tried a while ago and were pretty good! 

 

50g butter, plus a little extra for greasing

2 tbsp smooth peanut butter

3 tbsp honey or maple syrup

2 ripe bananas, mashed

1 apple, peeled and grated

250g rolled oats

85g dried apricot, chopped

100g raisin

85g mixed seed (we used pumpkin and sunflower). 

Method

  1. Heat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, and mix to combine.

  2. Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface. Bake for 55 mins until golden. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge. They will keep for up to 3 days

Not done much baking for a while. Been finding the weight loss a bit harder now so taken away some of my temptations. The missus sent me a pic of a lemon bakewell someone had posted on Facebook so I had a go at it. First time I've done a big tart (kenny williams .gif). Came out really well. I didn't ice it as had to go to footy but the kids did. I won't post a pic or Butchi will get his porno references out again!

Little while ago, I did chick pea curry. Had som in the freezer so defrosted it for lunch on Monday with Cauliflower Rice. Was fucking awesome. I'm not a huge rice fan, except in Arancini, I find it a bit stodgy. The cauli was really light and tasty. Think I'll make a big batch of the curry at weekend and freeze it.
